Module 4 · A clean and allergen-aware workplace
Cleaning, waste and pests
Lesson 7 of 8 · about 2 minutes
Cleaning removes dirt and grease. Disinfecting reduces bacteria to a safe level. Clean first and then disinfect, because dirt and grease stop disinfectant working. Follow the label. Leave the disinfectant on the surface for the time the label says.
Clean as you go. This means dealing with spills and mess as they happen, not leaving them until the end of the shift. Use clean cloths, and use the right cloth for the job. Some workplaces use colour-coded cloths, so learn what each colour is for. Never use a cloth from a toilet or bin area on a table or food surface. Keep cleaning products in their labelled containers, away from food.
Waste attracts pests and carries bacteria. Take it out of food rooms as quickly as possible. Use bins that close, and keep the lids shut. Empty a bin when it is full. Do not press rubbish down to fit more in. Wash your hands after you touch waste.
Pests include rats, mice, flies, cockroaches and birds. They carry bacteria and damage packaging. Signs of pests are droppings, gnaw marks, smear marks on walls, damaged packs and dead insects.
Help to keep pests out. Keep doors closed unless they are screened. Clean up spills. Keep food sealed. If you see any sign of pests, tell your supervisor at once. Do not put down bait or poison yourself.
