About this course

This course is for people who develop, lead and maintain HACCP plans. It works through the 12 Codex steps using one example from start to finish: team and scope, product description and intended use, hazard analysis with risk scoring, control measures, determining CCPs, validation, monitoring design and corrective action.

It then covers how to keep a plan alive: verification, audits, trend analysis, review triggers, integration with prerequisite programmes, and the culture and management commitment that make HACCP work. It uses the current Codex text, CXC 1-1969, and explains what UK law requires and what is good practice.

UK law sets no expiry date for food hygiene training. We suggest a refresher about every 3 years, and your employer may ask for it sooner.

Our certificates are private training certificates of completion, not regulated qualifications. UK law does not require one specific food hygiene certificate. It requires food handlers to be supervised and instructed or trained appropriately. Employers decide what training each role needs, and a certificate does not replace practical instruction or supervision.

Questions about this course

How long does this course take?

The lessons take about 55 minutes to read and the exam has 30 questions, so allow about an hour and a half. Take longer if you need to.

Does the law require this certificate?

No. The law says those responsible for developing and maintaining HACCP-based procedures must have adequate training in the HACCP principles. It does not name a certificate or a level. Your employer decides what your role needs. This is a private certificate of completion, not a regulated qualification.

Will this help me write a HACCP plan?

Yes. It explains the process in depth, but your plan must reflect your own site, products and processes. Complex or high-risk processes may also need specialist advice.

Does the course use the current Codex text?

Yes. It uses CXC 1-1969 as revised in 2020 and 2022, including the Annex IV decision tree. Some older materials use earlier wording.

What does Level 3 mean?

Level 3 describes the depth of the content. It is not a level on the RQF or SCQF.
